Bonjour! We are Alex and Tess.

Alex, Born in Paris and raised in the South of France. He is an Arsenal loving, 2000’s rap listening, sweet tooth enthusiast. His artisanal style and attention to detail comes from his worldly professional experience, from Nice to London in establishments such as the Wolseley and Zedel Brasserie, and the opening of a venue for Jamie Oliver. 

Tess, locally born and raised, who you may recognise as the daughter to music teacher legend Mrs Fair, (not Hannah, the other one). Or she may have taught you or your littles to swim at one point or another. She has a background in performing arts, hospitality, customer service and swim teaching. 

One night on the way home from working at this new venue, Alex sat across from Tess, who was living abroad and happened to be on the Bakerloo line of the London Tube.…. together they moved to Nice where Alex worked for the prestigious LAC Patisserie and Tess graciously volunteered her time to taste test. 

Australia was calling, and after some traveling and working at Patisseries in Melbourne during lockdown, they decided to settle down in the beauty that is Milton. Alex began working for the local favorites at Lagom Bakery as head pastry chef, but there was a dream still lingering in the background…

Skip to August ‘24 a pregnant Tess at Élodie’s 2nd birthday saw the perfect space for their dream business pop up. With 48 hours to make a decision, they took the leap, even though the timing wasn’t perfect (but was it ever going to be?).

By October, Beurre Noisette opened in a flurry of stress, fun, and flavour to the most wonderful response from our community! And just as soon as they’d opened, the doors closed briefly again in January to welcome beautiful baby Zoé and more layers to the business.

When you step into Beurre Noisette, our dream, your eyes are seeing fresh and seasonal local produce, your ears are hearing the chatter of sharing love with our community, and your nose is smelling the best of it all, it’s probably BUTTER.
